Eggplant Rolls with Mozzarella Recipe

Ingredients:

  • 1 large eggplant, sliced lengthwise into thin strips
  • 1 cup all-purpose flour
  • 2 cups Italian seasoned breadcrumbs
  • 2 eggs, beaten
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cups marinara sauce
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 375°F.
  2. Season the sliced eggplant with salt and pepper and set aside for 10 minutes.
  3. Spread the flour on a plate. Put the breadcrumbs on another plate. Beat the eggs in a shallow dish.
