Eggplant with Light Ham

Ingredients:

  • 1 large eggplant, sliced into rounds
  • 4-5 slices of light ham, sliced into strips
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup fresh parsley, chopped

Instructions:
