Far with Prunes, Apricots and Dates Recipe

Ingredients

  • 1 cup of far (pearl barley)
  • 1/2 cup of prunes, pitted and chopped
  • 1/2 cup of dried apricots, chopped
  • 1/2 cup of dates, pitted and chopped
  • 4 cups of water
  • 1/4 teaspoon of salt
  • 1/4 teaspoon of cinnamon

Instructions

  1. Rinse the far in cool water and drain
  2. In a pot, add the far, water and salt.
  3. Bring to a boil, then reduce the heat to low and cover the pot with a lid.
  4. Simmer for 25-30 minutes or until the far is tender and the water has been absorbed.
  5. Add the chopped prunes, apricots, dates and cinnamon to the pot.
  6. Mix well, then cover the pot and continue cooking for an additional 5 minutes.
  7. Remove from the heat and let the mixture sit covered for 5-10 minutes.
  8. Fluff with a fork before serving.
