Fig and Apricot Chutney

Ingredients:

  • 1 cup dried figs, chopped
  • 1 cup dried apricots, chopped
  • 1/2 cup raisins
  • 1/2 cup red onion, diced
  • 1/2 cup apple cider vinegar
  • 1/4 cup brown sugar
  • 1 tablespoon mustard seeds
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • Salt and pepper, to taste

Directions:

  1. In a large pot, combine the chopped figs, apricots, raisins, and diced onion.
  2. Add the apple cider vinegar, brown sugar, mustard seeds, cinnamon, ginger, cloves, salt, and pepper to the pot.
  3. Bring the mixture to a boil over high heat, stirring occasionally.
  4. Reduce the heat to low and let the chutney simmer for 30-40 minutes, stirring occasionally, until the mixture has thickened.
  5. Remove from heat and let cool completely. The chutney will continue to thicken as it cools.
  6. Transfer the chutney to a jar and refrigerate until ready to serve.
