FIG Jam Recipe
Ingredients:
- 2 pounds fresh figs, stemmed and quartered
- 1 1/2 cups granulated sugar
- 1/2 cup fresh lemon juice (about 2 medium lemons)
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground cardamom
- 1/4 teaspoon ground ginger
- Pinch of salt
Instructions:
- Place the figs in a large, heavy-bottomed pot.

- To test if the jam has set, place a small plate in the freezer for a few minutes to chill. After 45 minutes of cooking, place a small amount of jam on the chilled plate and return it to the freezer for a minute. If it wrinkles when you nudge it with your finger, the jam is ready.
- Remove the jam from the heat and skim any foam off the top.
- Ladle the hot jam into sterilized jars, leaving about 1/4-inch of headspace. Close the lids tightly.
- Process the jars in a boiling water bath for 10 minutes. Alternatively, store the jam in the refrigerator for up to 3 months or in the freezer for up to 6 months.
