Filled Cake Recipe

Ingredients:

  • 1 1/2 cups flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup milk
  • 1 cup filling of your choice (e.g. fruit preserves, buttercream, whipped cream, chocolate ganache)

Instructions:

  1. Preheat the oven to 350°F (180°C). Grease and flour two 9-inch (23cm) cake pans.
  2. In a medium-sized bowl, whisk together the flour, baking powder, baking soda, and salt until well combined. Set aside.
  3. In a large bowl, cream the butter and sugar together until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, starting and ending with the dry ingredients. Mix until just combined.
  5. Pour the batter equally into the prepared pans, smoothing the surface with a spatula.
  6. Bake the cakes for 25-30 minutes or until a toothpick inserted into the center comes out clean. Remove from the oven and let cool for 10 minutes before removing from the pans and transferring to a wire rack to cool completely.
  7. To assemble the cake, place one cake layer on a cake plate. Spread the filling of your choice evenly over the surface, leaving a slight border around the edge. Top with the second cake layer, pressing gently to secure.
  8. Serve immediately or refrigerate until ready to serve.
