Filo Pastry Snails with Spinach and Feta Recipe

Ingredients

  • 8 sheets filo pastry
  • 200g fresh spinach, washed and chopped
  • 200g feta cheese, crumbled
  • 50g butter, melted
  • 1 egg, beaten

Directions

  1. Preheat the oven to 180°C/350°F and line a baking tray with parchment paper.
  2. Place the spinach in a large bowl and add the crumbled feta cheese. Stir to combine.
  3. Lay out one sheet of filo pastry and brush with melted butter.
  4. Place another sheet of filo pastry on top and brush with melted butter again.
  5. Cut the pastry sheets into strips, about 6cm wide.
  6. Spoon the spinach and feta mixture onto each strip, leaving a border at the top.
  7. Carefully roll each strip into a snail shape, starting from the bottom and rolling up to the top.
  8. Brush the beaten egg over the snails, and place on the baking tray.
  9. Bake for 20-25 minutes, until the filo pastry is golden brown and crispy.
