Flemish Stew Recipe
Ingredients:
- 2 lbs. beef chuck or sirloin, cut into 2-inch cubes
- 4 tablespoons all-purpose flour
- 4 tablespoons butter
- 2 onions, sliced
- 2 cloves garlic, minced
- 2 cups beef broth
- 1 tablespoon Dijon mustard
- 1 tablespoon brown sugar
- 2 bay leaves
- 2 sprigs fresh thyme
- 1 bottle Belgian ale
- Salt and freshly ground black pepper
Instructions:
- Preheat the oven to 325°F.
- Season the beef with salt and pepper and toss with the flour.
- In a large Dutch oven or casserole, melt the butter over medium-high heat.
- Add the beef and cook until brown on all sides, about 8 minutes.
- Remove the beef from the pot and set aside.
- Add the onions and garlic to the pot and sauté until softened, about 5 minutes.
- Add the beef broth, Dijon mustard, brown sugar, bay leaves, and thyme. Stir until well combined.
- Pour in the Belgian ale and bring to a boil.
- Return the beef to the pot, stirring to combine.
- Cover the pot with a lid and transfer to the oven.
- Bake for 2 1/2 hours or until the beef is fork-tender.
- Remove the pot from the oven and let it sit for a few minutes to cool.
- Serve hot, over mashed potatoes or with crusty bread.
