Fresh Fig Tart Recipe

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup almond meal
  • 1/4 tsp salt
  • 3 Tbsp granulated sugar
  • 1/2 cup unsalted butter, cold and cubed
  • 1 large egg yolk
  • 1/2 tsp pure vanilla extract
  • 1/4 cup ice water
  • 1 1/2 lbs fresh figs, stemmed and sliced
  • 1/4 cup honey
  • 2 Tbsp fresh lemon juice
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground ginger
  • 1/4 tsp ground nutmeg
  • 1/8 tsp ground cloves
  • 2 Tbsp unsalted butter, melted

Instructions

  1. In a large bowl, whisk together the flour, almond meal, salt and sugar. Add the cold butter and, using a pastry cutter or your fingers, blend until the mixture resembles a coarse meal.
  2. In a small bowl, whisk together the egg yolk, vanilla extract and ice water. Add the mixture to the dry ingredients and stir until combined.
  3. Knead the dough a few times, then shape it into a disk. Wrap it in plastic wrap and refrigerate for at least 30 minutes or up to 24 hours.
  4. Preheat the oven to 375°F. Roll out the dough on a lightly floured surface to a 12-inch round. Transfer the dough to a 9-inch tart pan, pressing it firmly into the bottom and up the sides. Trim off any overhanging dough and prick the bottom and sides of the crust with a fork.
  5. Bake the crust for 15-20 minutes, until lightly golden brown. Remove from the oven and let cool slightly.
  6. In a large bowl, toss together the sliced figs, honey, lemon juice, cinnamon, ginger, nutmeg, cloves and melted butter. Pour the mixture into the partially baked crust, spreading it out in an even layer.
  7. Return the tart to the oven and bake for another 25-30 minutes, until the figs are tender and the filling is bubbly and caramelized.
  8. Let the tart cool for at least 10 minutes before serving.
