Fricassee of pork with mushrooms

Ingredients:

  • 800g pork, cut into small cubes
  • 400g mushrooms, sliced
  • 2 onions, finely chopped
  • 3 cloves of garlic, minced
  • 2 tablespoons of flour
  • 400ml chicken stock
  • 2 bay leaves
  • 2 sprigs of thyme
  • 1 teaspoon of cornstarch
  • salt and pepper
  • olive oil for frying

Instructions:

  1. In a large pot, heat the olive oil over medium heat. Add the pork in batches and cook until browned on all sides. Transfer to a plate and set aside.
  2. In the same pot, sauté the onions until soft and translucent. Add the garlic and cook for another minute.
  3. Add the flour and stir until well combined.
  4. Gradually pour in the chicken stock, stirring constantly to avoid lumps. Add the bay leaves and thyme and bring to a boil.
  5. Return the pork to the pot, cover, and let simmer for 45 minutes.
  6. Add the sliced mushrooms and let cook for another 15 minutes.
  7. In a small bowl, dissolve the cornstarch in a tablespoon of water. Stir into the pot and let cook for another 5 minutes, or until the sauce thickens.
  8. Season with salt and pepper to taste and serve hot.

Serving Suggestions:
