Garlic Soup Recipe

Ingredients:

  • 2 heads of garlic
  • 1 onion, chopped
  • 4 tablespoons butter
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Croutons for serving

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. Cut off the top of the garlic heads and place them on a baking sheet.
  3. Drizzle olive oil over the garlic heads, then wrap them in foil.
  4. Bake for 30-35 minutes, until the garlic is soft.
  5. Remove from the oven and let cool.
  6. Peel the garlic and set aside.
  7. In a large pot, melt the butter over medium heat.

  13. Using an immersion blender, blend the soup until smooth.
  14. Return the soup to the pot and add the heavy cream, salt, and black pepper.
  15. Heat the soup over medium heat until warmed through, but do not boil.
  16. Serve hot with croutons on top.
