Gluten-Free Sandwich Bread
Ingredients:
- 2 cups gluten-free all-purpose flour
- 1 tsp xanthan gum
- 1 tbsp active dry yeast
- 1 tbsp sugar
- 1 tsp salt
- 1/4 cup olive oil
- 2 eggs
- 1 cup warm water (110°F)
Directions:
- Preheat your oven to 375°F. Grease a 8×4 inch loaf pan and set it aside.
- In a large bowl, whisk together the all-purpose flour, xanthan gum, yeast, sugar, and salt.
- Add the olive oil and eggs to the dry ingredients and mix well.
- Pour in the warm water and mix until the dough is smooth and well combined. You can use a stand mixer, hand mixer, or mix by hand with a wooden spoon.
- Pour the dough into the prepared loaf pan and smooth the top with a spatula.
- Bake in the preheated oven for 35-40 minutes, or until the bread is golden brown and a toothpick inserted into the center comes out clean.
- Cool in the pan for 10 minutes before removing it to cool completely on a wire rack.
