Gluten-Free Sandwich Bread

Ingredients:

  • 2 cups gluten-free all-purpose flour
  • 1 tsp xanthan gum
  • 1 tbsp active dry yeast
  • 1 tbsp sugar
  • 1 tsp salt
  • 1/4 cup olive oil
  • 2 eggs
  • 1 cup warm water (110°F)

Directions:

  1. Preheat your oven to 375°F. Grease a 8×4 inch loaf pan and set it aside.
  2. In a large bowl, whisk together the all-purpose flour, xanthan gum, yeast, sugar, and salt.
  3. Add the olive oil and eggs to the dry ingredients and mix well.
  4. Pour in the warm water and mix until the dough is smooth and well combined. You can use a stand mixer, hand mixer, or mix by hand with a wooden spoon.
  5. Pour the dough into the prepared loaf pan and smooth the top with a spatula.
  6. Bake in the preheated oven for 35-40 minutes, or until the bread is golden brown and a toothpick inserted into the center comes out clean.
  7. Cool in the pan for 10 minutes before removing it to cool completely on a wire rack.
