Gorgonzola and fig cupcake

Gorgonzola and Fig Cupcake Recipe

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup crumbled Gorgonzola cheese
  • 1/2 cup chopped dried figs
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 eggs
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup buttermilk

Directions:

  1. Preheat the oven to 350°F. Line a muffin tin with cupcake liners and set aside.
  2. In a medium mixing bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. In a separate mixing bowl, cream together the butter and sugar until smooth. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. Gradually add the flour mixture to the butter mixture, alternating with the buttermilk, and mixing well after each addition.
  5. Gently fold in the Gorgonzola cheese and chopped dried figs.
  6. Fill each cupcake liner about 2/3 full with batter. Bake for 20-23 minutes, or until the cupcakes are golden brown and a toothpick inserted in the center comes out clean.
  7. Cool the cupcakes in the pan for 5 minutes, then transfer to a wire rack to cool completely before serving.

Verdict:

The combination of tangy gorgonzola and sweet dried figs in a cupcake may sound unconventional, but it’s a surprisingly tasty pairing. The cupcakes have a moist and tender crumb, with chunks of figs and pockets of melted cheese providing flavor and texture. These cupcakes make for a unique and sophisticated dessert option that will impress your guests.

Serving Suggestions:

These cupcakes can be enjoyed on their own as a sweet-savory snack, but you can also get creative with your serving options. Consider topping them with a dollop of honey-flavored whipped cream or a sprinkle of chopped walnuts for added crunch. You could also pair them with a glass of red wine for a sophisticated after-dinner treat.
