Grapefruit Cake Recipe

Ingredients:

  • 2 grapefruits
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, room temperature
  • 1 cup granulated sugar
  • 2 eggs
  • 1/2 cup milk

Directions:

  1. Preheat the oven to 350°F (175°C). Grease a 9-inch cake pan and set aside.
  2. Using a vegetable peeler, peel the skin from one of the grapefruits. Slice the peel into thin strips and set aside.
  3. Squeeze the juice from both grapefruits and set aside.
  4. In a small bowl, whisk together the flour, baking powder, and salt.
  5. In a large bowl, cream the butter and sugar together until light and fluffy. Add the eggs one at a time, beating well after each addition.
  6. Add the flour mixture and the milk to the butter mixture alternately, beginning and ending with the flour mixture. Mix until just combined.
  7. Add the grapefruit juice to the batter and mix until combined.
  8. Pour the batter into the prepared cake pan and smooth the surface with a spatula. Bake for 35-40 minutes, or until a toothpick inserted in the center comes out clean.
  9. While the cake is baking, prepare the grapefruit syrup. In a small saucepan, combine the grapefruit peel, 1/2 cup of sugar, and 1/2 cup of water. Bring to a boil over medium-high heat and cook until the mixture thickens, about 5-7 minutes.
  10. When the cake is done, remove it from the oven and let it cool in the pan for 10 minutes. Then, use a toothpick or skewer to poke holes all over the top of the cake.
  11. Pour the grapefruit syrup over the cake, making sure to get it into all the holes. Allow the cake to cool completely before serving.
