Grapefruit Cake Recipe
Ingredients:
- 2 grapefruits
- 1 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 cup unsalted butter, room temperature
- 1 cup granulated sugar
- 2 eggs
- 1/2 cup milk
Directions:
- Preheat the oven to 350°F (175°C). Grease a 9-inch cake pan and set aside.
- Using a vegetable peeler, peel the skin from one of the grapefruits. Slice the peel into thin strips and set aside.
- Squeeze the juice from both grapefruits and set aside.
- In a small bowl, whisk together the flour, baking powder, and salt.
- In a large bowl, cream the butter and sugar together until light and fluffy. Add the eggs one at a time, beating well after each addition.
- Add the flour mixture and the milk to the butter mixture alternately, beginning and ending with the flour mixture. Mix until just combined.
- Add the grapefruit juice to the batter and mix until combined.
- Pour the batter into the prepared cake pan and smooth the surface with a spatula. Bake for 35-40 minutes, or until a toothpick inserted in the center comes out clean.
- While the cake is baking, prepare the grapefruit syrup. In a small saucepan, combine the grapefruit peel, 1/2 cup of sugar, and 1/2 cup of water. Bring to a boil over medium-high heat and cook until the mixture thickens, about 5-7 minutes.
- When the cake is done, remove it from the oven and let it cool in the pan for 10 minutes. Then, use a toothpick or skewer to poke holes all over the top of the cake.
- Pour the grapefruit syrup over the cake, making sure to get it into all the holes. Allow the cake to cool completely before serving.
