Green bean salad with tomato

Green Bean Salad with Tomato Recipe

Ingredients

  • 1 lb. fresh green beans, trimmed and halved
  • 2 medium tomatoes, chopped
  • 1/4 cup red onion, chopped
  • 2 cloves garlic, minced
  • 2 Tbsp. extra-virgin olive oil
  • 1 Tbsp. lemon juice
  • 1 tsp. honey
  • 1 tsp. Dijon mustard
  • 1/4 tsp. salt
  • Freshly ground black pepper, to taste

Instructions

  1. Bring a large pot of salted water to a boil. Add the green beans and cook until tender but still crisp, about 5-6 minutes.
  2. While the green beans are cooking, prepare the dressing. In a small bowl, whisk together the olive oil, lemon juice, honey, Dijon mustard, minced garlic, and salt.
  3. Drain the cooked green beans and rinse under cold water to stop the cooking process. Place the green beans in a large bowl.
  4. Add the chopped tomatoes and red onion to the bowl with the green beans.
  5. Pour the dressing over the vegetables and toss gently to combine.
  6. Taste and season with more salt and freshly ground black pepper, if needed.
  7. Refrigerate for at least 30 minutes before serving to allow the flavors to meld together.
  8. Serve chilled.
