Green Tomatoes Stuffed with Fresh Goat Cheese Recipe

Ingredients:

  • 4 medium-sized green tomatoes
  • 4 oz. fresh goat cheese
  • 2 tbsp. chopped fresh parsley
  • 2 tbsp. chopped fresh basil
  • 2 tbsp. chopped fresh chives
  • 2 cloves garlic, minced
  • 1/4 tsp. salt
  • 1/4 tsp. black pepper
  • 2 tbsp. olive oil

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. Cut off the top of each tomato, and scoop the pulp and seeds out of the centers with a spoon. Discard the seeds and reserve the pulp.
  3. In a medium bowl, mix together the goat cheese, parsley, basil, chives, garlic, salt, and pepper, as well as the tomato pulp you scooped out.
  4. Stuff this mixture into the cavities of the tomatoes, pressing down gently as you do so.
  5. Coat the bottom of a baking dish with olive oil, and arrange the stuffed tomatoes in a single layer in the dish.
  6. Bake the tomatoes for 20-25 minutes, or until the cheese is melted and bubbly and the tomatoes are tender but still hold their shape.
  7. Remove from the oven, let cool for a few minutes, and serve hot.
