Ham and Mushroom Omelet Recipe

Ingredients

  • 2 eggs
  • 2 slices of ham, chopped
  • 4 button mushrooms, sliced
  • 1/4 cup shredded cheddar cheese
  • 1/4 cup milk
  • Salt and pepper to taste
  • 1 tablespoon butter

Instructions

  1. In a small bowl, beat together eggs, milk, salt and pepper
  2. Melt butter in a non-stick skillet over medium heat
  3. Add mushrooms to the skillet and sauté for 2 minutes or until they are lightly browned
  4. Add ham and cook for an additional 2 minutes
  5. Pour the egg mixture into the skillet. Using a spatula, gently lift edges of omelet and allow uncooked eggs to flow to the bottom of the skillet
  6. Once the omelet is almost set, sprinkle shredded cheddar cheese on top
  7. Using a spatula, fold the omelet in half and cook for another 1-2 minutes or until the cheese has melted and the eggs are cooked to your liking
  8. Slide the omelet onto a plate and serve hot
