Hard salted butter caramel

Hard Salted Butter Caramel Recipe

Ingredients

  • 1 cup granulated sugar
  • 6 tablespoons unsalted butter
  • 1/2 cup heavy cream
  • 1 teaspoon sea salt

Instructions

  1. Fill a large bowl with ice water and set aside
  2. In a medium saucepan, melt the sugar over medium-high heat. Stir often with a heatproof spatula until sugar turns amber in color and completely melted. It should take about 7-9 minutes.
  3. Add the butter to the pan and stir until completely melted, about 2 minutes.
  4. Remove the pan from the heat and slowly pour the heavy cream into the mixture. It will bubble up, so be careful.
  5. Whisk the caramel until it is smooth and creamy.
  6. Return the caramel to medium-high heat and cook for another 2-3 minutes while stirring occasionally.
  7. Remove the caramel from heat and stir in the sea salt.
  8. Place the bottom of the pan into the ice water bath to cool the caramel quickly.
  9. Once caramel has cooled and thickened, pour it into candy molds or onto a parchment-lined baking sheet.
  10. Allow caramel to harden at room temperature for about 2 hours or until firm enough to handle.
  11. Pop caramels out of the molds or break them into pieces with a knife or fork.
