Hare Pâté Recipe
Ingredients:
- 1 hare, about 3.5-4lb, skinned, cleaned and boned
- 1/2 lb bacon or pork fatback, diced
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 2 cups chicken broth
- 1/4 cup brandy
- 1 tbsp thyme leaves
- 1 tsp ground allspice
- 1/2 tsp ground cinnamon
- 1/2 tsp ground ginger
- 1/2 tsp freshly grated nutmeg
- 2 eggs
- 1/2 cup heavy cream
- 1/2 cup flour
- 2 tbsp butter
- Salt and freshly ground black pepper
Directions:
- Cut the hare meat into small cubes, about 1 inch in size.
- In a skillet over medium heat, sauté bacon and onion until the onion is translucent, about 5 minutes. Add garlic and cook for 30 seconds.
- Add the hare meat and cook until browned, about 15 minutes.
- Add chicken broth, brandy, thyme, allspice, cinnamon, ginger, nutmeg, salt and pepper. Bring to a boil, then reduce heat and simmer for 2 to 2.5 hours, or until the meat is very tender.
- Remove from heat and allow to cool for 10-15 minutes.
- Using a food processor, blend the hare mixture until smooth.
- In a separate bowl, beat together the eggs and heavy cream. Stir the flour in and mix well.
- Heat a skillet over medium heat. Melt butter in the skillet until foaming.
- Add the hare mixture to the egg mixture, stirring well until combined.
- Place the hare mixture in a greased bread pan. Cover the mixture with foil and place the pan in a large baking dish. Pour 1 inch of boiling water into the baking dish.
- Bake for 1 hour at 375°F (190°C).
- Remove from the oven and allow to cool.
- Refrigerate overnight to allow the pâté to set.
- Serve with crusty bread, crackers, and a light salad.
