Hare pâté


Hare Pâté Recipe

Ingredients:

  • 1 hare, about 3.5-4lb, skinned, cleaned and boned
  • 1/2 lb bacon or pork fatback, diced
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 1/4 cup brandy
  • 1 tbsp thyme leaves
  • 1 tsp ground allspice
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/2 tsp freshly grated nutmeg
  • 2 eggs
  • 1/2 cup heavy cream
  • 1/2 cup flour
  • 2 tbsp butter
  • Salt and freshly ground black pepper

Directions:

  1. Cut the hare meat into small cubes, about 1 inch in size.
  2. In a skillet over medium heat, sauté bacon and onion until the onion is translucent, about 5 minutes. Add garlic and cook for 30 seconds.
  3. Add the hare meat and cook until browned, about 15 minutes.
  4. Add chicken broth, brandy, thyme, allspice, cinnamon, ginger, nutmeg, salt and pepper. Bring to a boil, then reduce heat and simmer for 2 to 2.5 hours, or until the meat is very tender.
  5. Remove from heat and allow to cool for 10-15 minutes.
  6. Using a food processor, blend the hare mixture until smooth.
  7. In a separate bowl, beat together the eggs and heavy cream. Stir the flour in and mix well.
  8. Heat a skillet over medium heat. Melt butter in the skillet until foaming.
  9. Add the hare mixture to the egg mixture, stirring well until combined.
  10. Place the hare mixture in a greased bread pan. Cover the mixture with foil and place the pan in a large baking dish. Pour 1 inch of boiling water into the baking dish.
  11. Bake for 1 hour at 375°F (190°C).
  12. Remove from the oven and allow to cool.
  13. Refrigerate overnight to allow the pâté to set.
  14. Serve with crusty bread, crackers, and a light salad.
