Herb Crusted Rack of Lamb
Ingredients:
- 2 racks of lamb, trimmed and frenched
- 1/4 cup fresh parsley
- 1/4 cup fresh thyme
- 1/4 cup fresh rosemary
- 4 cloves garlic, peeled
- 1/4 cup olive oil
- 1/2 cup breadcrumbs
- 1 tablespoon Dijon mustard
- Salt and pepper, to taste
Directions:
- Preheat the oven to 400 degrees Fahrenheit.
- In a food processor, pulse the parsley, thyme, rosemary, and garlic until finely chopped.
- Add in the olive oil and breadcrumbs and pulse until mixture resembles coarse sand.
- Season the lamb with salt and pepper and rub the Dijon mustard all over.
- Press the herb mixture onto the lamb racks, making sure it sticks well.
- Place the lamb racks in a roasting pan and bake for 20-25 minutes, or until the internal temperature reaches 135 degrees Fahrenheit for medium-rare.
- Let the lamb rest for 10 minutes before carving into chops.
Serving Suggestions:
Serve the herb crusted rack of lamb with roasted vegetables, mashed potatoes, or a simple green salad. The flavorful crust pairs well with a light red wine such as Pinot Noir or Merlot. Enjoy!
