Herb Crusted Rack of Lamb

Ingredients:

  • 2 racks of lamb, trimmed and frenched
  • 1/4 cup fresh parsley
  • 1/4 cup fresh thyme
  • 1/4 cup fresh rosemary
  • 4 cloves garlic, peeled
  • 1/4 cup olive oil
  • 1/2 cup breadcrumbs
  • 1 tablespoon Dijon mustard
  • Salt and pepper, to taste

Directions:

  1. Preheat the oven to 400 degrees Fahrenheit.
  2. In a food processor, pulse the parsley, thyme, rosemary, and garlic until finely chopped.
  3. Add in the olive oil and breadcrumbs and pulse until mixture resembles coarse sand.
  4. Season the lamb with salt and pepper and rub the Dijon mustard all over.
  5. Press the herb mixture onto the lamb racks, making sure it sticks well.
  6. Place the lamb racks in a roasting pan and bake for 20-25 minutes, or until the internal temperature reaches 135 degrees Fahrenheit for medium-rare.
  7. Let the lamb rest for 10 minutes before carving into chops.

Serving Suggestions:

Serve the herb crusted rack of lamb with roasted vegetables, mashed potatoes, or a simple green salad. The flavorful crust pairs well with a light red wine such as Pinot Noir or Merlot. Enjoy!
