Hochepot Recipe

Ingredients

  • 2 lbs of stewing beef
  • 4 cups of water
  • 1 onion, chopped
  • 4 cloves of garlic, minced
  • 3 carrots, chopped
  • 2 leeks, chopped and washed
  • 3 potatoes, peeled and cubed
  • 1 turnip, peeled and cubed
  • 1 bouquet garni (thyme, bay leaves, and parsley tied in a bundle)
  • Salt and pepper to taste

Instructions

  1. In a large pot, brown the stewing beef over medium-high heat until evenly caramelized, then set aside.
  2. Add chopped onions and garlic to the pot, and sauté for a few minutes until softened.
  3. Add the browned beef back to the pot, and cover with 4 cups of water.
  4. Add the bouquet garni, salt, and pepper to the pot.
  5. Bring to a boil, then reduce heat and simmer gently for about 2 hours, until the beef is tender.
  6. Add the chopped vegetables to the pot and continue simmering for another 30 minutes, or until vegetables are tender.
  7. Remove the bouquet garni and serve the hot Hochepot.
