Homemade Ravioli without a Machine

Ingredients:

  • 1 cup all-purpose flour
  • 1 egg
  • 1 tablespoon water
  • 1/2 teaspoon salt
  • 1 tablespoon olive oil
  • 1 cup ricotta cheese
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon chopped fresh basil
  • 1/2 teaspoon chopped fresh oregano
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 egg, beaten
  • 1/4 cup tomato sauce
  • 1 tablespoon chopped fresh parsley

Instructions:

  1. In a large mixing bowl, combine the flour and salt.
  2. In another bowl, beat the egg, water, and olive oil together.
  3. Pour the egg mixture into the flour mixture and stir to combine.
  4. Transfer the dough onto a floured surface and knead it until it becomes smooth, approximately 10 minutes.
  5. Form the dough into a ball and cover it with plastic wrap. Allow it to rest for approximately 30 minutes.
  6. In a small mixing bowl, stir together ricotta cheese, Parmesan cheese, basil, oregano, salt, and black pepper.
  7. Roll out the dough on a floured surface until it becomes thin, approximately 1/8 inch.
  8. Cut the dough into 3-inch squares.
  9. Place a spoonful of the cheese mixture into the center of each square, brush each square with beaten egg.
  10. Fold the square in half, pressing the edges together to seal the ravioli.
  11. Repeat until all the dough and cheese mixture have been used.
  12. Boil a large pot of salted water.
  13. Once the water has boiled, gently drop the ravioli in the water.
  14. Cook for approximately 3-5 minutes until the ravioli floats to the surface.
  15. Drain the ravioli and add the sauce and parsley.
