Homemade Ravioli without a Machine
Ingredients:
- 1 cup all-purpose flour
- 1 egg
- 1 tablespoon water
- 1/2 teaspoon salt
- 1 tablespoon olive oil
- 1 cup ricotta cheese
- 1/4 cup grated Parmesan cheese
- 1 teaspoon chopped fresh basil
- 1/2 teaspoon chopped fresh oregano
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 1 egg, beaten
- 1/4 cup tomato sauce
- 1 tablespoon chopped fresh parsley
Instructions:
- In a large mixing bowl, combine the flour and salt.
- In another bowl, beat the egg, water, and olive oil together.
- Pour the egg mixture into the flour mixture and stir to combine.
- Transfer the dough onto a floured surface and knead it until it becomes smooth, approximately 10 minutes.
- Form the dough into a ball and cover it with plastic wrap. Allow it to rest for approximately 30 minutes.
- In a small mixing bowl, stir together ricotta cheese, Parmesan cheese, basil, oregano, salt, and black pepper.
- Roll out the dough on a floured surface until it becomes thin, approximately 1/8 inch.
- Cut the dough into 3-inch squares.
- Place a spoonful of the cheese mixture into the center of each square, brush each square with beaten egg.
- Fold the square in half, pressing the edges together to seal the ravioli.
- Repeat until all the dough and cheese mixture have been used.
- Boil a large pot of salted water.
- Once the water has boiled, gently drop the ravioli in the water.
- Cook for approximately 3-5 minutes until the ravioli floats to the surface.
- Drain the ravioli and add the sauce and parsley.
