Homemade Salidou

Ingredients:

  • 1 cup granulated sugar
  • 1/2 cup water
  • 1/2 cup heavy cream
  • 4 tablespoons unsalted butter
  • 1/2 teaspoon sea salt

Instructions:

  1. In a heavy-bottomed saucepan, bring the sugar and water to a boil.
  2. Lower the heat and let the mixture simmer for about 10 minutes, swirling the pan but not stirring.
  3. Remove from heat and add the cream, butter, and salt. Whisk well to combine.
  4. Return to low heat and cook for about 10 more minutes, stirring constantly, until the caramel thickens and coats the back of a spoon.
  5. Remove from heat and pour the caramel into a jar or airtight container. Let cool to room temperature, then refrigerate until ready to use.
