Recipe: Invisible Apple Cake by Cyril Lignac

Ingredients:

  • 4 large apples
  • 3 eggs
  • 150g caster sugar
  • 70g flour
  • 20cl milk
  • 70g butter
  • 1 tablespoon baking powder
  • A pinch of salt

Instructions:

  1. Preheat the oven to 180C.
  2. Grease and flour a 22cm cake pan.
  3. Peel the apples and cut them into thin slices.
  4. In a mixing bowl, whisk the eggs and sugar together until the mixture becomes frothy.
  5. Sift the flour, baking powder and salt into the mixture, and fold in gently.
  6. Heat the milk and butter in a saucepan until the butter has melted, then pour it into the mixture and mix until smooth.
  7. Add the apple slices to the mixture and stir well, making sure that each slice is coated.
  8. Pour the mixture into the prepared cake pan and smooth the surface with a spatula.
  9. Bake in the oven for 45 minutes, or until a toothpick inserted in the center comes out clean.
  10. Remove from the oven and let the cake cool for at least 10 minutes before serving.
