Jura Blurs Recipe
Ingredients:
- 1 lb. ground beef
- 1 onion, diced
- 1 red bell pepper, diced
- 1 cup uncooked quinoa
- 3 cups chicken broth
- 2 cans (14 oz. each) diced tomatoes
- 1 can (8 oz.) tomato sauce
- 1 tbsp. chili powder
- 1 tsp. garlic powder
- 1 tsp. smoked paprika
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 1 can (15 oz.) black beans, drained and rinsed
- 1 can (15 oz.) kidney beans, drained and rinsed
- 1 can (15 oz.) corn, drained
- 1/2 cup shredded cheddar cheese
Instructions:
- In a large pot or Dutch oven, cook ground beef over medium-high heat until browned.
- Add onion and bell pepper; cook until vegetables are tender.
- Add quinoa, chicken broth, diced tomatoes, tomato sauce, chili powder, garlic powder, smoked paprika, salt and black pepper; bring to a boil.
- Reduce heat; cover and simmer 15-20 minutes or until quinoa is cooked.
- Add in black beans, kidney beans and corn; stir to combine and cook until heated through.
- Serve topped with shredded cheddar cheese.
