Krouchtikis (Polish Cakes) Recipe
Ingredients
- 1 cup all-purpose flour
- 1/4 cup granulated sugar
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 4 tablespoons unsalted butter, melted
- 1 large egg, beaten
- 1/4 cup milk
- 1 teaspoon vanilla extract
- 1/2 cup fruit preserves (any flavor)
- Confectioners’ sugar for dusting
Directions
- Preheat the oven to 350°F. Grease a 12-cup muffin tin or line with cupcake liners.
- In a medium bowl, whisk together the flour, sugar, baking powder, and salt.
- In a separate bowl, whisk together the melted butter, egg, milk, and vanilla extract until well combined.
- Pour the wet ingredients into the flour mixture and stir until just combined.
- Spoon about a tablespoon of batter into each muffin cup. Add a small dollop of fruit preserves on top of the batter in each cup.
- Cover the preserves with another spoonful of batter, making sure to spread the batter over the preserves so it will cook evenly.
- Bake for 18-20 minutes or until the edges are golden brown and a toothpick inserted in the center comes out clean.
- Cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
- Sprinkle with confectioners’ sugar before serving.
