Ingredients

  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 4 tablespoons unsalted butter, melted
  • 1 large egg, beaten
  • 1/4 cup milk
  • 1 teaspoon vanilla extract
  • 1/2 cup fruit preserves (any flavor)
  • Confectioners’ sugar for dusting

Directions

  1. Preheat the oven to 350°F. Grease a 12-cup muffin tin or line with cupcake liners.
  2. In a medium bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In a separate bowl, whisk together the melted butter, egg, milk, and vanilla extract until well combined.
  4. Pour the wet ingredients into the flour mixture and stir until just combined.
  5. Spoon about a tablespoon of batter into each muffin cup. Add a small dollop of fruit preserves on top of the batter in each cup.
  6. Cover the preserves with another spoonful of batter, making sure to spread the batter over the preserves so it will cook evenly.
  7. Bake for 18-20 minutes or until the edges are golden brown and a toothpick inserted in the center comes out clean.
  8. Cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
  9. Sprinkle with confectioners’ sugar before serving.
