Ingredients

  • 1 kg lamb shoulder, cut into chunks
  • 2 onions, chopped
  • 4 garlic cloves, minced
  • 1-inch piece of ginger, grated
  • 1 tbsp. garam masala
  • 1 tbsp. ground coriander
  • 1 tbsp. ground cumin
  • 1 tbsp. turmeric powder
  • 1 tbsp. chili powder
  • 1 tsp. ground cinnamon
  • 1 tsp. ground cardamom
  • 1/2 tsp. ground nutmeg
  • 1 can of diced tomatoes
  • 1 can of coconut milk
  • 1/4 cup of chopped fresh cilantro leaves
  • 2 tbsp. vegetable oil
  • Salt and black pepper to taste

Instructions

  1. Heat the vegetable oil in a large pot or Dutch oven over medium heat.
  2. Add the onions, garlic, and ginger and sauté until the onions are soft and translucent, about 5 minutes.
  3. Turn the heat up to medium-high and add the lamb pieces and sauté until browned on all sides, about 5-7 minutes.
