Lamb Shank Couscous Recipe

Ingredients:

  • 4 lamb shanks
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 3 cloves garlic, minced
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 2 teaspoons smoked paprika
  • 2 teaspoons cinnamon

Instructions:

  1. Preheat oven to 350°F.
  2. Season the lamb shanks with salt and pepper.
  3. Heat the olive oil in a large, oven-proof pot or Dutch oven over medium-high heat.
  4. Add the lamb shanks and sear on all sides until browned, about 5-7 minutes.
  5. Remove the lamb shanks from the pot and set aside.
  6. Add the onions and carrots to the pot and sauté for 5 minutes, until softened.
