Lamb Shoulder Beans Recipe
Ingredients
- 1 pound of lamb shoulder, cut into small cubes
- 1 can of white beans, drained and rinsed
- 1 onion, diced
- 3 cloves of garlic, minced
- 1 tablespoon of tomato paste
- 1 teaspoon of smoked paprika
- 1 teaspoon of cumin
- 1 teaspoon of dried oregano
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- 2 cups of chicken broth
- 2 tablespoons of olive oil
- Cilantro, chopped, to garnish
Instructions
- Preheat the oven to 350°F (175°C).
- In a large ovenproof Dutch oven, heat the olive oil over medium heat.
- Add the lamb shoulder cubes to the pot and brown all sides, this should take around 5-7 minutes.
- Once the lamb is browned, remove the lamb from the pot and set aside.
- In the same pot, add the onions and garlic. Cook until the onions become translucent, stirring occasionally, for around 5 minutes.
- Add the tomato paste, smoked paprika, cumin, oregano, salt, and black pepper. Cook for a further 2-3 minutes until fragrant.
- Add the chicken broth to the pot and stir to combine.
- Add the lamb back to the pot along with the white beans.
- Cover the pot with a lid and transfer to the oven.
- Bake for 2 hours or until the lamb is soft and tender, stirring occasionally.
- Remove from the oven and let cool for 5 minutes.
- Garnish with chopped cilantro.
- Serve hot and enjoy!
