Lamb Shoulder Beans Recipe

Ingredients

  • 1 pound of lamb shoulder, cut into small cubes
  • 1 can of white beans, drained and rinsed
  • 1 onion, diced
  • 3 cloves of garlic, minced
  • 1 tablespoon of tomato paste
  • 1 teaspoon of smoked paprika
  • 1 teaspoon of cumin
  • 1 teaspoon of dried oregano
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 2 cups of chicken broth
  • 2 tablespoons of olive oil
  • Cilantro, chopped, to garnish

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large ovenproof Dutch oven, heat the olive oil over medium heat.
  3. Add the lamb shoulder cubes to the pot and brown all sides, this should take around 5-7 minutes.
  4. Once the lamb is browned, remove the lamb from the pot and set aside.
  5. In the same pot, add the onions and garlic. Cook until the onions become translucent, stirring occasionally, for around 5 minutes.
  6. Add the tomato paste, smoked paprika, cumin, oregano, salt, and black pepper. Cook for a further 2-3 minutes until fragrant.
  7. Add the chicken broth to the pot and stir to combine.
  8. Add the lamb back to the pot along with the white beans.
  9. Cover the pot with a lid and transfer to the oven.
  10. Bake for 2 hours or until the lamb is soft and tender, stirring occasionally.
  11. Remove from the oven and let cool for 5 minutes.
  12. Garnish with chopped cilantro.
  13. Serve hot and enjoy!
