Lamington Recipe
Ingredients:
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup milk
- 3 cups shredded coconut
- 2 cups powdered sugar
- 1/4 cup unsweetened cocoa powder
- 1/2 cup boiling water
- 1/4 cup unsalted butter, melted
Instructions:
- Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
- In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the eggs, one at a time, and then add in the vanilla extract. Mix well.
- Add the flour mixture to the bowl in three parts, alternating with the milk, and mixing until everything is well-combined.
- Pour the batter into the prepared baking dish and bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the cake to cool for at least 10 minutes, then cut it into small squares.
- Place the shredded coconut in a large, shallow dish.
- In a small mixing bowl, whisk together the powdered sugar and unsweetened cocoa powder.
- Stir in the boiling water and melted butter until a smooth chocolate glaze is formed.
- Dip each cake square in the chocolate glaze, then roll it in the coconut until it’s evenly coated.
- Place the coated lamingtons on a wire rack to set, then serve and enjoy!
