Lamington Recipe

Ingredients:

  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup milk
  • 3 cups shredded coconut
  • 2 cups powdered sugar
  • 1/4 cup unsweetened cocoa powder
  • 1/2 cup boiling water
  • 1/4 cup unsalted butter, melted

Instructions:

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Beat in the eggs, one at a time, and then add in the vanilla extract. Mix well.
  5. Add the flour mixture to the bowl in three parts, alternating with the milk, and mixing until everything is well-combined.
  6. Pour the batter into the prepared baking dish and bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  7. Allow the cake to cool for at least 10 minutes, then cut it into small squares.
  8. Place the shredded coconut in a large, shallow dish.
  9. In a small mixing bowl, whisk together the powdered sugar and unsweetened cocoa powder.
  10. Stir in the boiling water and melted butter until a smooth chocolate glaze is formed.
  11. Dip each cake square in the chocolate glaze, then roll it in the coconut until it’s evenly coated.
  12. Place the coated lamingtons on a wire rack to set, then serve and enjoy!
