Le Mans Rillettes Recipe
Ingredients:
- 2 lbs pork belly or shoulder, cut into small chunks
- 1 lb duck confit, shredded
- 1 onion, chopped
- 4 garlic cloves, chopped
- 1 tsp thyme
- 1 bay leaf
- 2 cups pork stock or water
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 cup brandy
Instructions:
- In a large pot, cook the pork belly or shoulder over medium heat until browned, about 10 minutes. Remove from pot and set aside.
- Add the onion and garlic to the pot and cook until softened, about 5 minutes.
- Return the pork to the pot and add the duck confit, thyme, bay leaf, pork stock or water, salt, and black pepper.
- Bring to a simmer and cook until the mixture is very tender and falling apart, about 3 hours.
- Remove the bay leaf and transfer the mixture to a food processor. Pulse until the mixture is chunky but spreadable.
- Transfer the mixture to a bowl and stir in the brandy.
- Cover and refrigerate for at least 2 hours before serving.
