Le Mans Rillettes Recipe

Ingredients:

  • 2 lbs pork belly or shoulder, cut into small chunks
  • 1 lb duck confit, shredded
  • 1 onion, chopped
  • 4 garlic cloves, chopped
  • 1 tsp thyme
  • 1 bay leaf
  • 2 cups pork stock or water
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup brandy

Instructions:

  1. In a large pot, cook the pork belly or shoulder over medium heat until browned, about 10 minutes. Remove from pot and set aside.
  2. Add the onion and garlic to the pot and cook until softened, about 5 minutes.
  3. Return the pork to the pot and add the duck confit, thyme, bay leaf, pork stock or water, salt, and black pepper.
  4. Bring to a simmer and cook until the mixture is very tender and falling apart, about 3 hours.
  5. Remove the bay leaf and transfer the mixture to a food processor. Pulse until the mixture is chunky but spreadable.
  6. Transfer the mixture to a bowl and stir in the brandy.
  7. Cover and refrigerate for at least 2 hours before serving.
