Lebanese Falafel Salad Recipe

Ingredients:

  • 1 cup of chickpeas
  • 1/2 chopped onion
  • 2 cloves of minced garlic
  • 2 tbsp of parsley
  • 2 tbsp of flour
  • 1 tsp of cumin
  • 1 tsp of coriander
  • 1/4 tsp of salt
  • 1/4 tsp of black pepper
  • Vegetable oil for frying
  • 4 cups of lettuce or mixed greens
  • 1/2 cup of sliced cucumber
  • 1/2 cup of sliced tomato
  • 1/4 cup of sliced red onion
  • 1/4 cup of crumbled feta cheese

Instructions:

  1. Soak chickpeas overnight or for 8 hours.
  2. Drain and rinse the chickpeas, and then add them to a food processor with the onion, garlic, parsley, flour, cumin, coriander, salt, and black pepper.
  3. Pulse the ingredients together until the mixture is well combined and has a crumb-like texture.
  4. Heat vegetable oil in a frying pan until hot.
  5. Scoop 1 tablespoon of the chickpea mixture and form it into a ball. Flatten it slightly to form a patty.
  6. Gently place the falafel into the hot oil and fry for 2-3 minutes per side or until golden brown.
  7. Remove the falafel from the oil and place them on a paper towel to drain the excess oil.
  8. Add lettuce or mixed greens to a bowl.
  9. Top with sliced cucumber, sliced tomato, and sliced red onion.
  10. Place the falafel on top of the salad.
  11. Sprinkle crumbled feta cheese over the salad.
  12. Serve immediately.
