Leek and Smoked Salmon Quiche Recipe

Ingredients:

  • 1 pre-made pie crust
  • 3 leeks, white and light green parts thinly sliced
  • 6 oz. smoked salmon, roughly chopped
  • 6 large eggs
  • 1 cup heavy cream
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup grated Parmesan cheese

Directions:

  1. Preheat the oven to 375°F.
  2. Pre-bake the pie crust according to the package instructions and set aside.
  3. In a large skillet over medium heat, cook the leeks until softened (about 10 minutes).
  4. Add the smoked salmon and cook for a few more minutes, stirring occasionally. Remove from the heat.
