Leek Gratin with Goat Cheese, Pine Nuts and Almonds

Ingredients:

  • 4 large leeks
  • 2 tablespoons unsalted butter
  • 2 tablespoons flour
  • 1 1/2 cups milk
  • 1/2 cup crumbled goat cheese
  • 1/4 cup pine nuts, toasted
  • 1/4 cup sliced almonds, toasted
  • Salt and pepper, to taste

Instructions:

  1. Preheat your oven to 375°F (190°C) and butter a gratin dish.
  2. Trim the leeks and remove the tough, dark green tops. Slice the leeks lengthwise and rinse well under running water.
  3. Bring a large pot of salted water to a boil. Add the leeks and cook until tender, about 8-10 minutes. Drain well and arrange them in the prepared gratin dish.
