Ingredients:
- 1 leg of lamb, bone-in (approximately 5-6 pounds)

Instructions:

- Spread the vegetable mixture in a single layer on a baking sheet. Roast in the oven for 20-30 minutes, or until the vegetables are tender and lightly browned.
- Remove the lamb from the oven and let it rest for 10-15 minutes before slicing.
- Serve the sliced lamb with the roasted vegetables.
