Ingredients:

  • 1 leg of lamb, bone-in (approximately 5-6 pounds)
  • 1/4 cup honey
  • 2 tablespoons olive oil

  • 1 cup chicken broth

Instructions:

  1. Preheat oven to 375°F (190°C).
  2. In a small bowl, combine honey, olive oil, minced garlic, chopped fresh rosemary, 1 teaspoon salt, and 1/2 teaspoon black pepper. Mix well.

  8. Spread the vegetable mixture in a single layer on a baking sheet. Roast in the oven for 20-30 minutes, or until the vegetables are tender and lightly browned.
  9. Remove the lamb from the oven and let it rest for 10-15 minutes before slicing.
  10. Serve the sliced lamb with the roasted vegetables.
