Lemon Cookies
Ingredients:
- 1 cup unsalted butter, at room temperature
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 tbsp grated lemon zest
- 2 3/4 cups all-purpose flour
- 2 tsp baking powder
- 1 tsp salt
- 1/4 cup lemon juice
- 1/2 cup powdered sugar
Instructions:
- Preheat oven to 350°F. Line a baking sheet with parchment paper.
- In a large bowl, cream together the butter and sugar until light and fluffy, about 2 minutes.
- Add in the eggs, one at a time, beating well after each addition.
- Mix in the vanilla extract and lemon zest.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually mix the dry ingredients into the wet ingredients until just combined. Add in the lemon juice and mix until incorporated.
- Scoop the dough into 1-inch balls and place them 2 inches apart on the prepared baking sheet. Flatten the balls slightly with your fingers.
- Bake for 10-12 minutes or until the cookies are lightly golden brown on the bottom.
- Remove from the oven and cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
- Once the cookies are completely cooled, dust them with powdered sugar.
