Lemon Cookies

Ingredients:

  • 1 cup unsalted butter, at room temperature
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tbsp grated lemon zest
  • 2 3/4 cups all-purpose flour
  • 2 tsp baking powder
  • 1 tsp salt
  • 1/4 cup lemon juice
  • 1/2 cup powdered sugar

Instructions:

  1. Preheat oven to 350°F. Line a baking sheet with parchment paper.
  2. In a large bowl, cream together the butter and sugar until light and fluffy, about 2 minutes.
  3. Add in the eggs, one at a time, beating well after each addition.
  4. Mix in the vanilla extract and lemon zest.
  5. In a separate bowl, whisk together the flour, baking powder, and salt.
  6. Gradually mix the dry ingredients into the wet ingredients until just combined. Add in the lemon juice and mix until incorporated.
  7. Scoop the dough into 1-inch balls and place them 2 inches apart on the prepared baking sheet. Flatten the balls slightly with your fingers.
  8. Bake for 10-12 minutes or until the cookies are lightly golden brown on the bottom.
  9. Remove from the oven and cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
  10. Once the cookies are completely cooled, dust them with powdered sugar.
