Lemon Curd Cheesecake Recipe
Ingredients:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/3 cup unsalted butter, melted
- 32 oz cream cheese, room temperature
- 1 1/4 cups granulated sugar
- 1 tablespoon vanilla extract
- 4 large eggs, room temperature
- 1/2 cup lemon curd
- 1/4 cup heavy cream
Directions:
- Preheat oven to 325°F (165°C). Wrap the outside of a 9-inch springform pan with two layers of aluminum foil.
- In a medium bowl, mix graham cracker crumbs, sugar, and melted butter until moistened. Press mixture onto the bottom of the prepared pan. Bake for 10 minutes and let cool.
- In a large bowl, beat cream cheese with an electric mixer on medium speed until light and fluffy, about 3 minutes. Add sugar and vanilla extract and continue beating for another 2 minutes. Add eggs one at a time, beating until just combined after each addition. Scrape down the sides and bottom of the bowl as needed.
- Stir in lemon curd and heavy cream. Pour mixture into the cooled crust and smooth the top with an offset spatula.
- Place the aluminum foil-wrapped springform pan into a large baking dish and pour hot water into the baking dish until it reaches halfway up the sides of the pan.
- Bake for 1 hour and 20 minutes or until the top of the cheesecake is golden brown and set around the edges but still slightly wobbly in the center.
- Turn off the oven, prop open the door, and let the cheesecake cool in the oven for 30 minutes.
- Remove the cheesecake from the baking dish and remove the aluminum foil. Run a sharp knife around the edges of the cheesecake to loosen it from the pan. Cover and refrigerate for at least 4 hours or overnight.
- Serve chilled and garnish with whipped cream and lemon zest, if desired.
