Lentil Terrine Recipe

Ingredients:

  • 1 cup dried green lentils
  • 2 cups vegetable broth
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup rolled oats
  • 1/4 cup chopped fresh parsley

Instructions:

  1. Preheat your oven at 375°F (190°C).
  2. Place the lentils and the vegetable broth in a large pot and bring to a boil over high heat. Once boiling, reduce heat and simmer for about 20 minutes until the lentils are tender.
  3. In a skillet over medium heat, sauté the onion and garlic with a bit of oil until softened, for about 5 minutes.
  4. Add the thyme, oregano, paprika, salt, and pepper to the skillet. Cook for another minute.
  5. Drain the lentils and place them in a large mixing bowl and add the onion mixture, rolled oats, and parsley. Combine until well mixed.
  6. Take a loaf pan and line with parchment paper. Transfer half of the lentil mixture into the loaf pan and press down firmly to pack the mixture.
  7. Add the rest of the lentil mixture and again press down firmly to pack it into the loaf pan.
  8. Cover the pan with foil and bake for 45 minutes in the preheated oven.
  9. Remove the foil and bake for an additional 10-15 minutes until the top is golden brown and crispy.
  10. Remove from the oven and let cool for 10 minutes before slicing and serving.
