Light Cookies Recipe

Ingredients:

  • 1 cup oats
  • 1 cup all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 1/3 cup unsweetened applesauce
  • 1/3 cup honey
  • 1 egg
  • 1 tsp vanilla extract
  • Optional: chocolate chips, raisins, nuts or any other preferred add-ins

Instructions:

  1. Preheat the oven to 350°F (175°C)
  2. In a large mixing bowl, combine oats, flour, baking soda and salt. Mix well.
  3. Add in applesauce, honey, egg, and vanilla extract and mix until the ingredients are well combined.
  4. If desired, add in your choice of add-ins such as chocolate chips, raisins, nuts, etc.
  5. Using a cookie scoop or tablespoon, form dough into small balls and place on a baking sheet lined with parchment paper.
  6. Using a fork, press down slightly on each cookie to flatten it slightly.
  7. Bake for 10-12 minutes, or until the edges are golden brown.
  8. Remove from oven and allow to cool on a wire rack for 5 minutes before serving.
