Ingredients

  • 1 pre-made pie crust
  • 5 oz. fresh salmon, cooked and flaked
  • 1 leek, thinly sliced
  • 1 clove garlic, minced
  • 1 tbsp. olive oil
  • 4 eggs
  • 3/4 cup low-fat milk
  • 1/4 cup grated Parmesan cheese
  • 1 tsp. dried thyme
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F.
  2. Unroll pie crust and place into a 9-inch pie dish. Trim excess crust and crimp edges.
  3. Cook salmon in a pan with olive oil. Remove from heat and let cool. Flake salmon into bite-sized pieces.
