Light Stew Recipe

Ingredients:

  • 1 pound boneless chicken breast, cubed
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 2 cups water
  • 2 cups mixed vegetables (carrots, celery, potatoes, corn)
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste

Instructions:
