Linguine with Prawns, Chili and Parmesan Recipe

Ingredients:

  • 400g linguine
  • 24 large raw prawns (shrimp), peeled and deveined
  • 2 red chili peppers, finely chopped
  • 4 cloves garlic, finely sliced
  • 100g butter
  • 150g grated Parmesan cheese
  • Handful of fresh parsley, chopped
  • Salt and pepper to taste
  • Olive oil

Instructions:

  1. Bring a large pot of salted water to a boil. Add the linguine and cook until al dente. Reserve 1 cup of pasta water and drain the rest.
  2. Meanwhile, heat a large frying pan over medium-high heat. Add a drizzle of olive oil and cook the prawns until they turn pink, about 3 minutes. Remove from the pan and set aside.
  3. In the same pan, add the butter, chili peppers, and garlic. Cook for 1-2 minutes until fragrant.
  4. Add the reserved pasta water and bring to a simmer. Add the cooked linguine to the pan and toss to coat in the sauce.
  5. Add the cooked prawns, Parmesan cheese, and parsley. Toss again until everything is well combined and the cheese has melted into the sauce.
  6. Serve hot with additional grated Parmesan cheese and chopped parsley, if desired.
