Linguine with Prawns, Chili and Parmesan Recipe
Ingredients:
- 400g linguine
- 24 large raw prawns (shrimp), peeled and deveined
- 2 red chili peppers, finely chopped
- 4 cloves garlic, finely sliced
- 100g butter
- 150g grated Parmesan cheese
- Handful of fresh parsley, chopped
- Salt and pepper to taste
- Olive oil
Instructions:
- Bring a large pot of salted water to a boil. Add the linguine and cook until al dente. Reserve 1 cup of pasta water and drain the rest.
- Meanwhile, heat a large frying pan over medium-high heat. Add a drizzle of olive oil and cook the prawns until they turn pink, about 3 minutes. Remove from the pan and set aside.
- In the same pan, add the butter, chili peppers, and garlic. Cook for 1-2 minutes until fragrant.
- Add the reserved pasta water and bring to a simmer. Add the cooked linguine to the pan and toss to coat in the sauce.
- Add the cooked prawns, Parmesan cheese, and parsley. Toss again until everything is well combined and the cheese has melted into the sauce.
- Serve hot with additional grated Parmesan cheese and chopped parsley, if desired.
