Madeleine Cookie Recipe

Ingredients:

  • 2/3 cup sugar
  • 3 large eggs
  • 1 1/2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 9 tablespoons unsalted butter, melted and cooled, plus more for greasing the molds
  • 1 tablespoon honey
  • Zest from one lemon
  • Confectioners’ sugar, for dusting

Instructions:

  1. Preheat oven to 375°F. Brush Madeleine molds with melted butter and refrigerate for 5 minutes.
  2. In a large bowl, beat sugar and eggs until light and fluffy.
  3. Sift flour, salt, and baking powder over egg mixture, and fold gently using a spatula.
  4. Add vanilla extract, honey, melted butter, and lemon zest, and mix until well combined.
  5. Fill each mold with the batter, about 3/4 full.
  6. Bake for 10-12 minutes, or until the edges are golden brown and the centers are puffed up.
  7. Remove Madeleines from the oven and let them cool for a few minutes in the molds.
  8. Using a butter knife or small spatula, gently remove the Madeleines from the molds and place them on a wire rack to cool completely.
  9. Dust confectioners’ sugar on top of each Madeleine.
  10. Serve and enjoy!
