Madeleine Cookie Recipe
Ingredients:
- 2/3 cup sugar
- 3 large eggs
- 1 1/2 cups all-purpose flour
- 1/4 teaspoon salt
- 1 1/2 teaspoons baking powder
- 1 teaspoon vanilla extract
- 9 tablespoons unsalted butter, melted and cooled, plus more for greasing the molds
- 1 tablespoon honey
- Zest from one lemon
- Confectioners’ sugar, for dusting
Instructions:
- Preheat oven to 375°F. Brush Madeleine molds with melted butter and refrigerate for 5 minutes.
- In a large bowl, beat sugar and eggs until light and fluffy.
- Sift flour, salt, and baking powder over egg mixture, and fold gently using a spatula.
- Add vanilla extract, honey, melted butter, and lemon zest, and mix until well combined.
- Fill each mold with the batter, about 3/4 full.
- Bake for 10-12 minutes, or until the edges are golden brown and the centers are puffed up.
- Remove Madeleines from the oven and let them cool for a few minutes in the molds.
- Using a butter knife or small spatula, gently remove the Madeleines from the molds and place them on a wire rack to cool completely.
- Dust confectioners’ sugar on top of each Madeleine.
