Mango-foie gras tartlet

Ingredients:

  • 1 large ripe mango, diced
  • 1/2 cup foie gras, diced
  • 1 sheet puff pastry, thawed
  • 1 egg yolk, beaten
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Roll out the puff pastry onto a floured surface and using a circular cookie cutter, cut out circles of pastry to fit into tartlet molds.
  3. Gently press the pastry into the molds and prick them all over with a fork and brush the tops with egg yolk.
  4. Bake in the preheated oven for 10–15 minutes, until golden brown.
  5. Meanwhile, mix together the diced mango and foie gras in a bowl and season with salt and pepper to taste.
  6. Remove the tartlet shells from the oven and spoon the mango-foie gras mixture into each shell.
  7. Return the filled tartlets to the oven and cook for a further 5–10 minutes, until the foie gras is melted and the mango is slightly caramelized.
  8. Remove from the oven and allow to cool for a couple of minutes before carefully removing the tartlets from the molds.
