Mango-foie gras tartlet
Ingredients:
- 1 large ripe mango, diced
- 1/2 cup foie gras, diced
- 1 sheet puff pastry, thawed
- 1 egg yolk, beaten
- Salt and pepper to taste
Instructions:
- Preheat the oven to 375°F (190°C).
- Roll out the puff pastry onto a floured surface and using a circular cookie cutter, cut out circles of pastry to fit into tartlet molds.
- Gently press the pastry into the molds and prick them all over with a fork and brush the tops with egg yolk.
- Bake in the preheated oven for 10–15 minutes, until golden brown.
- Meanwhile, mix together the diced mango and foie gras in a bowl and season with salt and pepper to taste.
- Remove the tartlet shells from the oven and spoon the mango-foie gras mixture into each shell.
- Return the filled tartlets to the oven and cook for a further 5–10 minutes, until the foie gras is melted and the mango is slightly caramelized.
- Remove from the oven and allow to cool for a couple of minutes before carefully removing the tartlets from the molds.
