Ingredients:

  • 1 cup white rice
  • 2 ripe mangoes, peeled and chopped
  • ½ onion, chopped
  • 1 jalapeño pepper, seeded and chopped
  • 2 garlic cloves, minced
  • 1 tsp grated ginger
  • ½ tsp turmeric
  • ½ tsp cumin
  • 1 tsp salt
  • 2 tbsp oil
  • 2 cups water
  • ¼ cup chopped cilantro

Instructions:

  1. Rinse the rice in a fine mesh colander and drain well.
