Ingredients

  • Peels from 1 large cantaloupe or honeydew melon
  • 6 cups of water
  • 3 cups of granulated sugar

  • 1 cinnamon stick

Instructions

  1. Wash the melon and cut away the fruit. Reserve the flesh for another use.
  2. Trim off any remaining green skin from the melon peels and discard.
  3. Cut the peels into small, thin strips.
  4. In a large pot, bring the water to a boil and add the melon peels.
  5. Reduce the heat to a simmer and cook the peels for 1 hour, or until they are soft and translucent.
  6. Remove the peels from the pot with a slotted spoon and measure out 4 cups of the cooking liquid. Discard the remaining liquid.
  7. Return the peels and the cooking liquid to the pot.
  8. Add the sugar, lemon juice, and cinnamon stick.
  9. Bring the mixture to a boil over medium-high heat, stirring to dissolve the sugar.
  10. Reduce the heat to medium-low and simmer the jam for 1 hour, or until it thickens and becomes syrupy.
  11. Remove the cinnamon stick and discard.
  12. Pour the jam into sterilized jars and seal tightly. Store in the refrigerator for up to 2 months.
