Mini Puff Pastries with Onion Confit, Goat Cheese and Fig Recipe

Ingredients:

  • 1 sheet of puff pastry
  • 1 tablespoon unsalted butter
  • 1 large onion, thinly sliced
  • 1/2 teaspoon salt
  • 1 tablespoon balsamic vinegar
  • 4 oz goat cheese
  • 4-5 fresh figs, sliced
  • 1 egg, lightly beaten
  • Flour for dusting

Directions:

  1. Preheat the oven to 375°F. Line a baking sheet with parchment paper.
  2. Onion Confit – In a medium saucepan, melt the butter over medium heat. Add the onions and salt and cook, stirring occasionally, until the onions are very soft and caramelized, 30-40 minutes. Stir in the balsamic vinegar and cook for another 5 minutes until the vinegar is absorbed.
  3. Roll out the puff pastry on a lightly floured surface into a rectangle about 1/8-inch thick. Cut the pastry into 2-inch squares. Prick the pastry with a fork and brush with the beaten egg.
  4. Place a teaspoon of the onion confit in the center of each square. Crumble some goat cheese over the onions and top with a slice of fig.
  5. Bake for 20-25 minutes until the pastry is puffed and golden brown. Let cool on the baking sheet for a few minutes before serving.

Verdict:

These mini puff pastries are the perfect appetizer for any occasion. The sweetness of the figs pairs perfectly with the savory onion confit and tangy goat cheese. The puff pastry adds a nice crunch to the dish. Your guests will love this tasty and elegant appetizer!
