Mini Stollen Recipe
Ingredients:
- 2 cups all-purpose flour
- 1/4 cup granulated sugar
- 1/2 teaspoon salt
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 cup unsalted butter, cut into small pieces
- 1/2 cup buttermilk
- 1/2 teaspoon vanilla extract

Instructions:
- Preheat the oven to 375 degrees F.
- In a large bowl, whisk together the flour, sugar, salt, baking powder, and baking soda.
- Using a pastry blender or your fingers, cut in the butter until the mixture resembles coarse crumbs.
- In a separate bowl, whisk together the buttermilk and vanilla extract.
- Add the buttermilk mixture to the flour mixture and stir until just combined.
- Add the raisins, apricots, almonds, candied orange peel, and almond extract and stir until well combined.
- Divide the dough into 12 equal pieces and shape each piece into a small loaf.
- Place the loaves on a greased or parchment-lined baking sheet.
- Bake for 20-25 minutes or until golden brown.
- Remove from the oven and let cool for 5 minutes on the baking sheet, then transfer to a wire rack to cool completely.
- Dust with confectioners’ sugar before serving.
