Mini Stollen Recipe

Ingredients:

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 cup unsalted butter, cut into small pieces
  • 1/2 cup buttermilk
  • 1/2 teaspoon vanilla extract
  • 1/2 cup raisins
  • 1/2 cup chopped dried apricots
  • 1/2 cup chopped almonds
  • 1/2 cup candied orange peel
  • 1/2 teaspoon almond extract
  • Confectioners’ sugar, for dusting

Instructions:

  1. Preheat the oven to 375 degrees F.
  2. In a large bowl, whisk together the flour, sugar, salt, baking powder, and baking soda.
  3. Using a pastry blender or your fingers, cut in the butter until the mixture resembles coarse crumbs.
  4. In a separate bowl, whisk together the buttermilk and vanilla extract.
  5. Add the buttermilk mixture to the flour mixture and stir until just combined.
  6. Add the raisins, apricots, almonds, candied orange peel, and almond extract and stir until well combined.
  7. Divide the dough into 12 equal pieces and shape each piece into a small loaf.
  8. Place the loaves on a greased or parchment-lined baking sheet.
  9. Bake for 20-25 minutes or until golden brown.
  10. Remove from the oven and let cool for 5 minutes on the baking sheet, then transfer to a wire rack to cool completely.
  11. Dust with confectioners’ sugar before serving.
