Mirabelle Plum Tart Recipe

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup sugar
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, chilled and cubed
  • 1 egg yolk
  • 2 tablespoons ice water
  • 2 pounds ripe Mirabelle plums, pitted and sliced
  • 2 tablespoons cornstarch

  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg

Instructions:

  1. Preheat the oven to 375°F (190°C) and prepare a 9-inch tart pan with a removable bottom.
  2. In a large mixing bowl, whisk together flour, sugar, and salt.
  3. Add the cubed butter to the flour mixture and use a pastry cutter or your fingers to cut the butter into the flour until the mixture resembles coarse crumbs.
  4. In a small bowl, whisk the egg yolk and ice water together, then add it to the flour mixture. Mix until the dough comes together.
  5. Transfer the dough to a floured surface and shape it into a disk. Roll it out to a 1/8-inch thickness and use it to line the prepared tart pan. Trim the excess dough from the edges.
  6. In another large mixing bowl, toss the sliced Mirabelle plums with cornstarch, sugar, cinnamon, and nutmeg until well coated.
  7. Arrange the plum slices in the prepared tart shell, overlapping them slightly.
  8. Bake the tart for 45-50 minutes, or until the crust is golden brown and the filling is bubbly.
  9. Remove the tart from the oven and let it cool for 15 minutes on a wire rack before serving.
