Mirabelle Plum Upside-Down Cake Recipe
Ingredients:
- 1 1/2 cups of all-purpose flour
- 2 teaspoons of baking powder
- 1/2 teaspoon of salt
- 1/2 cup of unsalted butter
- 3/4 cup of granulated sugar
- 2 eggs
- 1/2 cup of milk
- 1 teaspoon of vanilla extract
- 12-15 Mirabelle plums, halved and pitted
- 1/4 cup of brown sugar
- 1/4 cup of unsalted butter
Directions:
- Preheat oven to 350°F. Grease a 9-inch cake pan with butter.
- Melt 1/4 cup of butter in a saucepan, add brown sugar. Cook over medium heat until mixture boils/ thickens for about 2 minutes. Pour the mixture into the bottom of the greased cake pan. Arrange the Mirabelle plum halves on top of the brown sugar mixture.
- Cream together 1/2 cup of butter with granulated sugar using an electric mixer on medium speed until light and fluffy. Add eggs one at a time, continuing to beat until well blended.
- In a separate bowl, whisk together the all-purpose flour, baking powder, and salt. Add the dry ingredients to the butter-sugar mixture, alternating with milk, mixing well after each addition. Stir in vanilla extract.
- Pour the batter over the plums in the cake pan. Smooth the top of the batter with a spatula.
- Bake for approximately 30-40 minutes, until the cake is golden and a toothpick comes out clean. Allow the cake to cool for 5-10 minutes in the pan before inverting onto a plate so the plums are facing upright.
