Mirabelle Plum Upside-Down Cake Recipe

Ingredients:

  • 1 1/2 cups of all-purpose flour
  • 2 teaspoons of baking powder
  • 1/2 teaspoon of salt
  • 1/2 cup of unsalted butter
  • 3/4 cup of granulated sugar
  • 2 eggs
  • 1/2 cup of milk
  • 1 teaspoon of vanilla extract
  • 12-15 Mirabelle plums, halved and pitted
  • 1/4 cup of brown sugar
  • 1/4 cup of unsalted butter

Directions:

  1. Preheat oven to 350°F. Grease a 9-inch cake pan with butter.
  2. Melt 1/4 cup of butter in a saucepan, add brown sugar. Cook over medium heat until mixture boils/ thickens for about 2 minutes. Pour the mixture into the bottom of the greased cake pan. Arrange the Mirabelle plum halves on top of the brown sugar mixture.
  3. Cream together 1/2 cup of butter with granulated sugar using an electric mixer on medium speed until light and fluffy. Add eggs one at a time, continuing to beat until well blended.
  4. In a separate bowl, whisk together the all-purpose flour, baking powder, and salt. Add the dry ingredients to the butter-sugar mixture, alternating with milk, mixing well after each addition. Stir in vanilla extract.
  5. Pour the batter over the plums in the cake pan. Smooth the top of the batter with a spatula.
  6. Bake for approximately 30-40 minutes, until the cake is golden and a toothpick comes out clean. Allow the cake to cool for 5-10 minutes in the pan before inverting onto a plate so the plums are facing upright.
